NFPA 96, Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations, 2024 Edition
NFPA 96 is a standard that gives detailed guidance on how to design, install, operate, check, and maintain commercial kitchens to keep them safe from fires. It covers all types of cooking equipment, exhaust hoods, grease removal systems, ventilation setups, fire suppression systems, and how far things can be from flammable materials.
This standard applies to both home-style and public kitchens, as well as any commercial cooking that uses home-like equipment.
The latest version includes a new section about temporary and mobile food setups, like those using liquefied petroleum gas, which follows the rules from NFPA 58. It also improves and clarifies who is responsible for testing, inspecting, maintaining, and keeping these kitchen areas clean.
